For the starter, choose from Charente melons, cagouilles (snails), oysters, shellfish or Charente grillon (pork pâté). For the main course, decide between a veal chop from Chalais or a capon from Barbezieux, accompanied by potatoes from Ré Island and carrots from Jarnac-Champagne, unless you prefer fish directly from the Port of Cotinière.
