Beehives, a henhouse, a citrus greenhouse, fruit trees, vines, a vegetable garden and an on-site fishery: the idea is not to aim for utopian self-sufficiency, but to cultivate a different relationship with nature, the garden and cooking.
The Notes gourmet restaurant, sublimated by the cuisine of Chef Anthony Carballo, offers an environment conducive to awakening the senses.
The restaurant Notes is designed to offer a fine dining experience that combines gourmet cuisine and warm hospitality. Intimate, with only twenty or so place settings, this gourmet restaurant is as luxurious as a Napoleon III drawing room. With its wealth of cornices and mirrors, the venue has been beautifully restored and is the perfect setting in which to
enjoy the Carte Blanche tasting menu, served in four or seven courses.
