Le chef Didier Guilloneau a fait ses armes à l’hôtel des neiges à Courchevel, il a ensuite rejoint Michel Carrère à la Chamade à Bordeaux (1 macaron) et s’est rapproché de l’océan aux côté de Michel Suire aux Claires (1 macaron) à Bourcefranc.
